Hearty Beef Soup

Ingredients
  • 1 pound ground beef or leftover roast beef*
  • 1/2 small onion, chopped
  • 2 cups beef broth
  • 1/2 pound baby carrots
  • 4 medium potatoes, peeled and cut in chunks
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups precooked, canned or frozen vegetables of choice: tomatoes, green beans or corn
Directions
  • 1. In heavy saucepan, brown ground beef and onion. Remove from pan with slotted spoon and set aside. Wipe out pan.
  • 2. Carefully pour beef broth into pan. For thinner soup, add extra broth.
  • 3. Add carrots, potatoes, salt and pepper. Cook low until vegetables are tender, approximately 1 hour. Stir in ground beef mixture.
  • 4. Add any precooked vegetables, if desired, and heat through.

  • Serves 6
Tips

*When using leftover cooked roast beef: Cut roast into bite-size chunks. Set aside. In saucepan, sauté onion in oil. Carefully add beef broth. Add carrots, potatoes and other raw vegetables. Cook low until vegetables are tender, about 1 hour. Stir in roast beef and any precooked vegetables of choice. Simmer until well blended and hot.
