1. Preheat oven to 325 degrees. Bake bread until lightly toasted, about 20 minutes.
2. While bread is toasting, coarsely chop onions.
3. In saucepan, heat butter and olive oil. Add onions and sauté 20 minutes on low heat, stirring occasionally. Stir in flour until blended.
4. Slowly add beef broth. Mix well with a whisk.
5. Add salt, according to taste.
6. Bring to full boil, then simmer 20 minutes.
7. Pour soup into 4 oven safe bowls (1 1/2 cup capacity). Fill almost full.
8. Float slice of toasted French bread on top. Add 1/2 cup grated Swiss cheese. Repeat with each bowl.
9. Sprinkle 2 teaspoons Parmesan cheese on top of each serving.
10. Preheat oven to 425 degrees. Bake soup for 10 minutes.
11. Turn on broiler unit. Broil on top oven rack until cheese begins to brown. Watch closely.

Tips
*Substitute seasoned croutons for bread. After filling bowls with soup, sprinkle croutons generously over top and add Swiss and Parmesan cheeses. Continue with steps 10 and 11.
