Chili

Ingredients
  • 1/2 pound ground beef
  • 1/2 small onion, chopped
  • 1/2 medium green pepper, diced
  • 1/2 (15 ounce) can crushed tomatoes
  • 1/2 (6 ounce) can tomato paste
  • 1 4 ounce can diced green chilies *
  • 1/4 small jalapeño, diced
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon dried basil
  • 1/2 teaspoon garlic, minced
  • 1 cup beef broth
  • 2 (15 ounce) cans beans (pinto, white, kidney or black)
  • 1/2 pound pork or chicken
Directions
  • 1. Brown ground beef with chopped onion and bell pepper in large saucepan on medium heat. Drain.
  • 2. Add tomatoes, tomato paste, green chilies, jalapeno, chili powder, cumin, basil, garlic and beef broth.
  • 3. Drain beans and add to mixture. Turn heat to low.
  • 4. Cut pork or chicken in small chunks. Heat 1 tablespoon oil in skillet and meat until no longer pink in center. Remove from skillet with slotted spoon and add to chili mixture.
  • 5. Simmer, covered, for 1 hour, stirring occasionally.

Tips

*Mild Chili: Omit green chilies and jalapeno.
