Chicken Tortilla Soup

Ingredients
  • 2 chicken breast halves
  • 1 tablespoon oil
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 4 cups chicken broth
  • 1 (15 ounce) can whole kernel corn, drained
  • 3/4 cup mild chunky salsa
  • 8 ounces corn tortilla chips
  • 1/2 cup cheese, shredded
Directions
  • 1. Cut chicken into bite-size cubes. In a large saucepan, sauté chicken in oil until tender.
  • 2. Add garlic, cumin and chili powder. Mix well.
  • 3. Stir in broth, corn and salsa. Simmer 20 minutes.
Servings
  • Serves 6
Tips

To serve: break up tortilla chips into individual bowls and pour soup over chips. Top with cheese and sour cream.
