Spanish Rice

Ingredients
  • 2 cups long grain rice
  • 1 teaspoon garlic, minced
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • 3 tablespoons oil
  • 2 cups chicken broth
  • 1 cup canned crushed tomatoes
  • 1 tablespoon taco seasoning mix
  • 2 fresh tomatoes, diced
Directions
  • 1. In large skillet, sauté rice, garlic, onion and green pepper in hot oil until rice is lightly browned.
  • 2. Add chicken broth, crushed tomatoes, taco seasoning mix and fresh tomatoes. Simmer until liquid is absorbed and rice is tender, about 25 minutes.
