Rice Pilaf

Ingredients
  • 1 tablespoon butter
  • 1/4 small onion, minced
  • 1/8 cup celery, finely chopped
  • 1/2 cup rice, uncooked
  • 1 1/2 cups chicken broth
  • 1/2 tablespoon dry parsley flakes
  • 1/8 cup slivered almonds, toasted*
Directions
  • 1. Preheat oven to 325 degrees. Grease 8" casserole dish.
  • 2. Melt butter in skillet. Add onion and celery. Sauté 2 minutes.
  • 3. Spread rice in prepared casserole dish and add broth.
  • 4. Scatter sautéed onion and celery over broth.
  • 5. Cover and bake 30 minutes or until liquid is absorbed and rice is tender.
  • 6. Just before serving, add parsley and almonds. Toss lightly.

Tips

*To toast almonds: Preheat oven to 350 degrees. Spread almonds in single layer on ungreased cookie sheet. Bake 5 minutes, stirring occasionally, until lightly browned.
