Company Potatoes

Ingredients
  • 3 medium potatoes, unpeeled
  • 2 tablespoons butter
  • 1 10 3/4 ounce can cream of chicken soup
  • 1/2 cup sour cream
  • 3/4 cup Cheddar cheese, grated
  • 2 tablespoons green onion
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 3/4 cup corn flake crumbs
  • 1 tablespoon melted butter
Directions
  • 1. Boil potatoes until fork tender. Cool and remove skins. Dice or grate into a large bowl.
  • 2. Preheat oven to 350 degrees. Grease 8" baking dish.
  • 3. In saucepan, heat 2 tablespoons butter and soup.
  • 4. Add sour cream and pour mixture over potatoes.
  • 5. Mix in cheese. Chop green onion and add.
  • 6. Season with salt and pepper, to taste. Stir well.
  • 7. Spread into prepared baking dish. Bake uncovered 20 minutes.
  • 8. Mix cornflake crumbs and melted butter. Sprinkle over top of potatoes and bake an additional 10 minutes.
