1. Boil potatoes until fork tender. Cool and remove skins. Dice or grate into a large bowl.
2. Preheat oven to 350 degrees. Grease 8" baking dish.
3. In saucepan, heat 2 tablespoons butter and soup.
4. Add sour cream and pour mixture over potatoes.
5. Mix in cheese. Chop green onion and add.
6. Season with salt and pepper, to taste. Stir well.
7. Spread into prepared baking dish. Bake uncovered 20 minutes.
8. Mix cornflake crumbs and melted butter. Sprinkle over top of potatoes and bake an additional 10 minutes.
