1. Cut fries 1/4"to 1/2" thick and place in a bowl of cold water to prevent potatoes from turning brown.
2. With whisk combine flour, seasoned salt, garlic salt and water. (Add a little more water if needed to thin mixture to consistency of pancake batter.)
3. Place oil in medium saucepan over medium heat.
4. Test oil with a drop of batter. If it immediately rises to top, oil is ready. If drop turns black, reduce heat.
5. Drain potatoes and pat dry. Dip in batter until well coated.
6. Using tongs, lower fries one at a time into hot oil. Separate any fries that stick together. Fry until light to medium brown. Drain on paper towels.
7. Place fries in 8" baking dish. Add 1 cup shredded cheese and toss. Top with 1/2 cup cheese or more and microwave about 2 minutes or until cheese melts.

1. Combine all ingredients. Mix well.
2. Serve with hot fries.
