Egg Salad Sandwich

Ingredients
  • 3 large eggs
  • 1 or 2 tablespoons mayonnaise
  • 1 tablespoon sweet pickle relish
  • 4 thick slices whole wheat bread
  • 2 large lettuce leaves
  • 1 small tomato, sliced
Directions
  • 1. Place eggs in small saucepan. Cover with water.
  • 2. Bring to a full boil and boil 10 minutes.
  • 3. Drain water and run cold water over eggs. Let sit in cold water until eggs are cooled.
  • 4. Remove shells and mash eggs with fork.
  • 5. Add mayonnaise and pickle relish. Mix lightly.
  • 6. Spread on bread. Add lettuce and tomato, if desired.
