2. Combine mayonnaise, lemon juice, salt, pepper and celery.
3. Stir in chicken until all ingredients are well blended.
4. Refrigerate until ready to serve.
5. To serve, place piece of leafy lettuce on roll or croissant and add heaping tablespoon chicken salad.
