Spinach Salad with Strawberries and Pecans

Ingredients
  • 1 (6 ounce) package fresh baby spinach
  • 1 cup strawberries, cut in half
  • 1/2 cup toasted pecans
Directions
  • 1. Rinse spinach and place in 2 salad bowls.
  • 2. Top with sliced strawberries and pecans.
  • 3. Cover and refrigerate until ready to serve.
  • 4. Serve with Light Poppy Seed Dressing.

Light Poppy Seed Dressing
Ingredients
  • 1/2 cup light mayonnaise
  • 1 tablespoon vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon poppy seeds
Directions
  • Mix ingredients and refrigerate until ready to serve.
