1. Slice cheese into 1/4"slices. Slice tomatoes. Wash and drain basil leaves.
2. Alternate cheese slices, tomato slices and basil leaves on a round 10" plate or platter. Sprinkle lightly with salt and pepper.
3. Mix olive oil and vinegar. Pour over salad, as desired. Reserve extra dressing for dipping bread.
