Mandarin Green Salad

Ingredients
  • 1/4 cup sliced almonds
  • 1 1/2 tablespoons sugar
  • 1/4 head iceberg lettuce
  • 1/2 head romaine lettuce
  • 1 celery rib, sliced
  • 2 green onions, chopped (optional)
  • 1 (11 ounce) can mandarin oranges, well drained
Directions
  • 1. Mix almonds and sugar in heavy saucepan. Cook low to medium heat, stirring constantly, until sugar melts and almonds are coated.
  • 2. Remove from heat and spread in thin layer on wax paper.
  • 3. Cool and break into small pieces.
  • 4. Cut lettuce and place in a large salad bowl. Add celery and onions.
  • 5. Add almonds, oranges and dressing* just before serving.

Tips

*Lettuce wilts quickly once dressing is added. Add dressing to individual portions just before serving. Store leftover salad without dressing added.

Oil Vinegar Dressing
Ingredients
  • 2 tablespoons oil
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 1/2 tablespoon snipped parsley (or 1 teaspoon dried)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon Tabasco (optional)
Directions
  • Place in shaker container and shake until blended. Chill.
