Chicken Pasta Salad with Fruit

Ingredients
  • 1 Chicken breast half
  • 1 1/2 cups uncooked pasta
  • 1/3 cup celery, chopped
  • 1 cup fruit of choice
  • 1/2 cup coleslaw dressing or lime tarragon salad dressing
  • 1/3 cup cashews or almonds
Directions
  • 1. Cut chicken into bite-size chunks. Sauté in small amount of oil until tender and no longer pink in center. Refrigerate until cold.
  • 2. Cook pasta of choice according to package directions. Pour into colander and drain. Rinse with ice cold water until cooled. Combine pasta, chicken, celery, and fruits. Refrigerate until well chilled.
  • 3. Just before serving, mix dressing into chicken mixture. Top with cashews or slivered almonds.

Lime Tarragon Salad Dressing
Ingredients
  • 1/4 cup Mayonnaise
  • 1 1/2 teaspoon Sugar
  • 1/8 teaspoon salt
  • 1 1/2 teaspoon lime juice
  • 1 tablespoon milk
  • 1/2 teaspoon tarragon
  • 1/8 teaspoon dry mustard
Directions
  • 1. Mix all ingredients and refrigerate until chilled.
  • 2. Toss into salad prior to serving.
  • 3. Top with cashews or slivered almonds.
