BBQ Chicken Salad

Ingredients
  • 2 Chicken breast halves
  • 1 tablespoon oil
  • 1/4 cup favorite BBQ sauce, or to taste
  • 1/2 cup sliced almonds, sugared*
  • 2 cups bagged greens– romaine, mixed, spinach, etc.
  • 1/4 cup shredded carrots
  • 1/4 cup shredded purple cabbage
  • 1/2 cup sliced fresh strawberries
  • 1 avocado, peeled and chopped
  • 1 kiwi, peeled and sliced
  • 1/3 cup dried cranberries (near raisins in grocery store)
Directions
  • 1. Cut chicken into cubes. In skillet, stir-fry in oil until tender and no longer pink.
  • 2. Add barbeque sauce, mixing until chicken is well coated. Refrigerate several hours.
  • 3. Wash and drain greens.
  • 4. Add carrots, cabbage, strawberries, avocado, kiwi, and cranberries.
  • 5. Add chicken. Serve with light poppy seed dressing.
  • 6. Top with sugared almonds.

Tips

Prepare chicken and almonds in advance.

*Melt 3 tablespoons sugar in heavy saucepan. Stir in sliced almonds. Remove from heat and spread in thin layer on wax paper. Allow to cool completely. Break into small pieces.

Packaged sugared nuts can be found in most grocery stores.

Light Poppy Seed Dressing
Ingredients
  • 1/2 cup light mayonnaise
  • 1 tablespoon vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon poppy seeds
Directions
  • Mix ingredients and refrigerate until ready to serve.
