1. Brown ground beef and onion until meat is no longer pink and onion is tender. Add refried beans. Season with salt and pepper. Drain.
2. Mix together soup and enchilada sauce in saucepan. Heat on medium until hot and bubbly.
3. Spray 9" x 13" pan with cooking spray. Pour half the soup/sauce mixture into bottom of pan. Set aside.
4. Place tortillas on microwave safe plate and cover with paper towel. Heat in microwave 20 seconds.
5. Preheat oven to 350 degrees.
6. Spoon about 3 tablespoons meat on one end of each tortilla. Sprinkle 1 tablespoon cheese over meat. Fold edge of tortilla over filling, tuck sides in and roll up.
7. Place rolled tortillas in pan over sauce. Spread remaining sauce over top, covering tortillas well. Sprinkle with remaining grated cheese.
8. Bake uncovered 25 minutes or until very hot and bubbly. Serve over shredded lettuce and top with sour cream and guacamole.
