Fried Chicken Steak

Ingredients
  • 2 chicken breast halves
  • 1/4 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons vegetable oil
Directions
  • 1. Place chicken in plastic food bag and pound with flat side of meat tenderizer to 1/2" thick. Rinse chicken.
  • 2. Combine bread crumbs and Parmesan cheese. Dip chicken in mixture until well coated.
  • 3. In medium to large frying pan, fry chicken in hot oil. (Oil should cover the bottom of the pan.)
  • 4. Turn steaks over when well browned and brown other side. It takes about 10 minutes per steak to cook through.

Chicken Parmesan

  • 1. Preheat oven to 350 degrees.
  • 2. After frying place Fried Chicken Steaks in 8"x 8" baking dish.
  • 3. Cover with spaghetti sauce or homemade sauce.*
  • 4. Sprinkle with ¼ cup Mozzarella and 1 tablespoon Parmesan cheese.
  • 5. Bake uncovered 20 minutes or until hot and bubbly.
Sauce
Ingredients
  • 1/4 cup fresh mushrooms, chopped
  • 1/2 tablespoon butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 tablespoon tomato paste
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
Directions
  • 1. Brown mushrooms in melted butter. Sprinkle with salt and pepper.
  • 2. Mix in tomato paste and chicken broth. Cook on low heat 25 minutes.
  • 3. Mix cornstarch with two tablespoons water and add to broth mixture. Stir until thickened.
