Chicken and Chilies

Ingredients
  • 2 large boneless chicken breast halves
  • 1 tablespoon oil
  • 2 tablespoons onion, diced
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 2 tablespoons evaporated milk
  • 2 tablespoons diced chilies
  • 2 tablespoons salsa, optional
  • 1 (15 ounce) can chili, optional
  • 4 flour tortillas, broken in pieces
  • 1 1/2 cups Cheddar cheese, grated
Directions
  • 1. Preheat oven to 350 degrees. Grease 9" baking dish.
  • 2. Cut chicken into chunks. Heat oil in skillet and add chicken. Cook on medium heat until tender and no longer pink in center.
  • 3. Remove chicken with slotted spoon and place in mixing bowl.
  • 4. Sauté onion in same pan. Add to the chicken.
  • 5. Combine soup, milk, chilies, salsa, chili, tortillas and 1/2 cup cheese. Mix well and stir into chicken.
  • 6. Pour mixture into prepared baking dish.
  • 7. Cover with foil and bake 15 minutes. Remove foil and sprinkle with remaining 1 cup cheese.
  • 8. Bake uncovered 10 additional minutes or until hot and bubbly.
