Chicken and Broccoli

Ingredients
  • 4 boneless chicken breast halves
  • 2 tablespoons oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium bunch broccoli
  • Sauce
  • 1 1/2 cups cheese, grated
Directions
  • 1. Cut chicken in chunks. Heat oil in skillet. Add chicken and sprinkle with salt and pepper.
  • 2. Cook on low heat until chicken is tender and no longer pink in center.
  • 3. Preheat oven to 350 degrees.
  • 4. Wash broccoli. Cut off large stalks and discard. Break or cut broccoli into florets or spears.
  • 5. In saucepan with 1/4 cup water, cook broccoli 6 minutes until barely tender. Drain and place in greased 8" x 8" pan.
  • 6. Add chicken. Cover with sauce and top with grated cheese.
  • 7. Bake uncovered 30 minutes or until hot and bubbly.

Ingredients
  • 1/2 cup mayonnaise
  • 2 (10 3/4 ounce) cans cream of chicken soup
  • 1/2 tablespoon curry powder, optional
  • 1/2 tablespoon lemon juice

  • Mix all ingredients together.
