Key Lime Pie

Ingredients
  • 1 (8") baked pie crust or graham cracker crust
  • 4 egg yolks
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh or bottled lime juice
  • 1 Zest of one lime
  • 2 or 3 drops of green food coloring
  • 1 cup whipped cream
Directions
  • 1. Preheat oven to 350 degrees.
  • 2. Place egg yolks in small mixer bowl. Beat 1 minute on medium speed or until yolks are frothy and deep lemon color.
  • 3. Continue beating on low speed and gradually add sweetened condensed milk. Beat 1 minute.
  • 4. Continue beating while slowly adding lime juice. The mixture will thicken immediately.
  • 5. Continue beating only until all ingredients are well combined and mixture is smooth. If more flavor is desired, add zest of one lime.
  • 6. Add green food coloring, if desired. Spoon filling into cooled pie crust. Bake 20 to 30 minutes until set.
  • 7. Cool and refrigerate. Top with whipped cream before serving.
