1. Preheat oven to 350 degrees. Grease 9"x 13" baking pan.
2. In a metal bowl, pour boiling water over oats. Let stand while preparing batter.
3. In mixing bowl, mix oil or butter, eggs, sugar and brown sugar.
4. In another bowl, combine flour, soda, salt and cinnamon. Stir gradually into sugar mixture.
5. Add oatmeal and mix well. Spread in prepared pan.
6. Bake 30 minutes. Spread with frosting while hot.

Coconut Pecan Frosting
Ingredients

brown sugar

cup
evaporated milk
1/2
cup
butter

teaspoon
vanilla extract
1/2
cup
chopped pecans*

cup
coconut
Directions
1. In saucepan, heat brown sugar and milk until sugar is dissolved.
2. Add butter and stir almost constantly until mixture boils and becomes thick, about 3 to 5 minutes. Remove from heat.
3. Add vanilla, nuts, and coconut. Pour on cake while hot.
Tips
*Substitute other nuts, if desired.
