Lemon Cake

Ingredients
  • 1 Lemon Cake Mix
  • 1 3 ounce package lemon gelatin
  • 4 eggs
  • 1 1/4 cups water
  • 1/2 cup cooking oil
Directions
  • 1. Preheat oven to 350 degrees.
  • 2. Grease and flour 9" x 13" cake pan or 10" Bundt pan.
  • 3. In mixer bowl, combine cake mix, gelatin, eggs, water and oil. Beat two minutes on medium speed.
  • 4. Pour into prepared baking pan.
  • 5. Bake 30 to 35 minutes for 9" x 13" pan or 45 to 50 minutes for Bundt pan.
  • 6. Remove from oven and cool 10 minutes. For Bundt cake, turn onto cooling rack.
  • 7. While cake is still hot, poke holes in cake with a fork. Spread glaze evenly over cake.
  • 8. To serve, cut into squares or slices. Serve plain or top with whipped topping sprinkled with lemon zest.*

Tips

*For lemon zest, use a zester or fine grater to shave peel from a fresh lemon.

Ingredients
  • 2 cups powdered sugar
  • 1/3 cup lemon juice
Directions
  • Mix together and spread over hot cake.
