Cream Cheese Carrot Cake

Ingredients
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cups oil
  • 1 teaspoon vanilla extract
  • 3 cups grated carrot (about 4 large carrots)
  • 1 8 ounce package cream cheese, softened
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
Directions
  • 1. Preheat oven to 350 degrees. Grease and flour 9"x 13" baking pan.
  • 2. In large mixing bowl, mix sugar, eggs, oil and vanilla.
  • 3. Stir in carrots and cream cheese until well blended.
  • 4. In another bowl, combine dry ingredients and add to sugar mixture
  • 5. Spread in prepared pan.
  • 6. Bake 55 minutes. Cool and frost.

Variation: Add 1 cup raisins and 1 cup chopped nuts

Ingredients
  • 1/4 cup butter, softened
  • 1 8 ounce package cream cheese, softened
  • 1 pound powdered sugar (about 3 3/4 cups)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
Directions
  • Combine and spread on cooled cake
