Apple Harvest Cake

Ingredients
  • 2 cups sugar
  • 1/2 cup butter, softened
  • 2 eggs, beaten
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 4 cups peeled, shredded apples
  • 1 cup chopped nuts, optional
Directions
  • 1. Preheat oven to 350 degrees. Grease and flour 9"x 13" pan.
  • 2. In mixing bowl, cream sugar and butter until well blended. Stir in eggs.
  • 3. In another bowl, combine flour, baking soda, cinnamon, nutmeg and salt. Add to creamed mixture and mix well.
  • 4. Stir in apples and nuts. Spread in prepared pan.
  • 5. Bake 35 to 40 minutes.
  • 6. Top with desired sauce and whipped cream.

Caramel Sauce
Ingredients
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon flour
  • 1 teaspoon vanilla
Directions
  • 1. Combine sugar, brown sugar, milk, butter and flour in saucepan. Heat until butter is melted.
  • 2. Bring to a boil and gentle boil until sugar is dissolved, about 2 minutes. Add vanilla.
Butter Sauce
Ingredients
  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 3/4 cup evaporated milk
  • 1/2 teaspoon vanilla extract
Directions
  • 1. Melt butter over low heat. Add sugar and milk.
  • 2. Stir until mixture is creamy.
  • 3. Remove from heat and add vanilla.
