1. Heat oil in 8" skillet over medium heat. Add eggs and cook until set. (Or use omelet pan and follow instructions for use.)
2. Sprinkle veggies and cheese over omelet.
3. With egg turner, lift one side of omelet and fold over. Top with chopped veggies and shredded cheese, if desired.
