1. Melt butter in skillet. Add spinach and stir fry until wilted.
2. Sprinkle with salt and pepper. Remove spinach from pan.
3. Empty excess moisture from skillet and wipe it out.
4. Beat eggs and scramble in pan until almost done, but not dry.
5. Continue cooking eggs while stirring in spinach.
6. Spoon mixture into small casserole and sprinkle top with grated cheese. Serve immediately.
