Spinach with Eggs

Ingredients
  • 1 teaspoon butter
  • 2 ounces fresh baby spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 eggs
  • 1 tablespoon cheese, grated
Directions
  • 1. Melt butter in skillet. Add spinach and stir fry until wilted.
  • 2. Sprinkle with salt and pepper. Remove spinach from pan.
  • 3. Empty excess moisture from skillet and wipe it out.
  • 4. Beat eggs and scramble in pan until almost done, but not dry.
  • 5. Continue cooking eggs while stirring in spinach.
  • 6. Spoon mixture into small casserole and sprinkle top with grated cheese. Serve immediately.
