1. Peel and grate potatoes (julienne-type grater is fun).*
2. Heat a well-oiled skillet or griddle to medium high.
3. Place a circle of grated potatoes on griddle and fry until golden brown. Turn and fry until potatoes are crisp. Add more oil as needed for desired crispness.

*Substitute finely diced potatoes or substitute 2 cups frozen potatoes.
For added flavor, add 2 tablespoons diced onion before frying.
