Cinnamon Swirl Bread

Ingredients
  • 1 cup milk
  • 1/4 cup butter, softened
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 tablespoon dry yeast
  • 1/4 cup lukewarm water
  • 4 1/2 cups flour
  • 2 eggs
  • 2 tablespoons melted butter
  • 3 tablespoons sugar
  • 1 tablespoon cinnamon
Directions
  • 1. Combine milk, butter, ¼ cup sugar and salt in mixing bowl.
  • 2. In a small bowl, sprinkle yeast over warm water. Let stand until dissolved, about 5 minutes. Add to milk mixture.
  • 3. Add 2 1/4 cups flour and beat well. Blend in eggs. Add enough remaining flour to make soft dough. Knead about 10 minutes.
  • 4. Place dough in greased bowl. Cover with clean kitchen cloth and let rise 1 hour or until almost double.
  • 5. Grease 2 (8 1/2 "x 4 1/2 ") loaf pans.
  • 6. Divide dough in half. Roll each half in 1/4" thick rectangle. Brush with melted butter. Mix 3 tablespoons sugar and cinnamon. Sprinkle over butter.
  • 7. Roll, jelly roll style, starting at narrow end. Pinch and seal seams well with wet fingers (If seams are not tightly sealed, bread will bulge on side and filling will escape.)
  • 8. Place loaves seam side down in prepared pans. Cover and let rise to double, about 1 hour. Preheat oven to 350 degrees.
  • 9. Bake loaves 30 minutes. Drizzle or spread glaze over warm bread.
Servings
  • Makes 2 (8 1/2" x 4 1/2") loaves
Glaze
Ingredients
  • 4 teaspoons milk
  • 1/2 teaspoon vanilla
  • 1 cup powdered sugar
Directions
  • Combine all and drizzle over bread.
Cinnamon French Toast
Directions
  • 1. Omit glaze.
  • 2. Slice Cinnamon Swirt Bread into 3/4" slices.
  • 3. Soak in beaten eggs (1 egg per 2 slices French Toast).
  • 4. On lightly greased griddle, fry each slice until golden brown.
  • 5. Serve hot with butter and syrup.
