Quick Banana Bread

Ingredients
  • 1/2 cup melted butter
  • 3 over ripe bananas
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped nuts, optional
Directions
  • 1. Preheat oven to 325 degrees. Grease and flour 1 (8 1/2"x 4 1/2") loaf pan or 10 miniature (3 1/2"x 2 1/2") pans.
  • 2. Melt butter and set aside to cool.
  • 3. In mixing bowl, mash bananas well. Beat in sugar and eggs.
  • 4. Combine flour, salt and soda. Add gradually to sugar mixture.
  • 5. Pour in melted butter and mix well. Stir in nuts, if desired.
  • 6. Pour into prepared loaf pans. Bake 55 to 60 minutes for large loaf or 30 minutes for miniature loaves, or until loaves are well browned and center is set.
