2. Grease and flour 2 (8 1/2"x 4 1/2") loaf pans or 12 (3 1/2"x 2 1/2") miniature pans.
3. In large mixing bowl, blend eggs and sugar.
4. Add pumpkin and oil, mixing slightly.
5. In another bowl, combine flour, salt, baking soda, cinnamon, nutmeg and ginger.
6. Gradually add flour mixture to sugar mixture. Mix thoroughly.
7. Fold in chips and nuts, if desired.
8. Pour into prepared loaf pans and bake large loaves 50 to 60 minutes or miniature loaves approximately 22 minutes.

1. Preheat oven to 350 degrees. Grease muffin pans or line with baking papers.
2. Mix batter for Pumpkin Chocolate Chip Bread.
3. Fill muffin pans 2/3 to ¾ full.
4. Bake approximately 25 minutes. Remove from pans and place on cooling rack.
