1. In a small bowl, sprinkle yeast over 1/4 cup warm water. Let sit until dissolved, about 5 minutes.
2. In large mixer bowl, using paddle attachment, combine 1 1/2 cups warm water, sugar, oil, salt, eggs, potatoes and dissolved yeast. (Mix dough by hand if large mixer is not available.)
3. Add flour, one cup at a time to form soft dough. Place in greased bowl, cover with clean kitchen cloth and let rise until double, about 1 hour.
4. Punch down. Divide dough into three parts. Let sit 5 minutes.
5. On lightly floured board, roll each third into approximately 12" circle. With a pizza cutter, cut into 12 triangles.
6. Starting at wide end, roll each triangle into a crescent shape. Place rolls on greased baking sheet. Cover and let rise until double, about 1 hour.
7. Preheat oven to 375 degrees. Bake one pan at a time 10 minutes or until light brown.

Makes 3 dozen rolls
Tips
*Use prepared instant potatoes or cooked, mashed potatoes. Cool.
Serve with butter, honey, strawberry butter or favorite spread.
Strawberry Butter
Ingredients

10 ounce carton
frozen strawberries, thawed and drained
1
cup
butter, softened
1/2
cup
powdered sugar
Directions
1. Combine all ingredients in food processor.
2. Blend until very smooth and lighter in color, about 10 minutes.
