Fruit Nut Loaf

Ingredients
  • 1 1/2 cups walnuts, coarsely chopped
  • 1 1/2 cups pecans, coarsely chopped
  • 1 cup dates, coarsely chopped
  • 1 cup maraschino cherries, cut in half
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs, beaten
  • 1 teaspoon vanilla extract
Directions
  • 1. Preheat oven to 300 degrees. Grease and flour 1 (9"x 5") loaf pan or 8 miniature (3 1/2"x 2 1/2").
  • 2. Combine nuts, dates and cherries in large mixing bowl.
  • 3. In another bowl, stir together flour, sugar, baking powder and salt.
  • 4. Add to nut mixture, stirring until nuts and fruits are well coated.
  • 5. Fold eggs and vanilla into mixture and stir until all ingredients are moistened. Gently spoon into prepared pan.
  • 6. Bake 1 hour for large loaf or 30 minutes for miniature loaves or until dry and lightly browned.
  • 7. Cool 10 minutes in pan. Loosen edges and turn onto wire rack.
Servings
  • Makes 1 (9" x 5") loaf or 12 miniature (3 1/2" x 2 1/2") loaves

*Substitute any variety of favorite nuts.
