Directions
1. Preheat oven to 375 degrees. Grease 8" square baking pan.
2. In a bowl, combine cornmeal and milk. Allow to soak for 3 minutes.
3. In another bowl, mix flour, sugar, salt and baking powder.
4. Add cornmeal mixture, oil and egg to flour mixture. Stir until all ingredients are just blended. Do not over mix.
5. Spread in prepared pan. Bake 25 minutes or until lightly browned.

2. Divide batter between 12 greased muffin cups (standard size muffin pan).
3. Bake about 20 minutes until lightly browned.
